Contaminant levels in food and feed shall be as low as reasonably achievable through best practice such as good agricultural practice (GAP) and good manufacturing practice (GMP) following an appropriate risk assessment and management.

This document addresses how to conduct sample collection and perform analytical testing methods to measure level of contaminants in food and feed. Definitions are provided in this document. The document also contains sampling procedures for aflatoxins and fumonisins in maize and corn, as well as guidelines of maximum limits for toxins and contaminants in a wide range of food commodities.

Overall, manufactures and suppliers should follow these principles to ensure that contaminant levels do not exceed limits.
