Overview
Microbial safety of lipid-based ready-to-use foods for management of moderate acute malnutrition and severe acute malnutrition: Second Report, is a WHO publication based on an expert meeting held to addresses the issue of microbial contamination of lipid-based ready-to-use foods (RUFs) and assess the risks of foodborne infections in the malnourished population of children that consume RUFs.
The document outlines various approaches that purchasers of RUFs might use to establish microbiological criteria to assure the safety of RUFs and to communicate to manufacturers their safety expectations. The document pays particular attention to managing the risk of salmonellosis, and stresses the need for screening ingredients. This starts around page 40.
